Salads

1.  Pumpkin Avocado Salad

Ingredients:

2 tbsp red onion, chopped

2 tbsp lime juice

2 medium hass avocados, diced

2 cups cooked pumpkin, diced

2 tbsp chopped cilantro

Low sodium salt and pepper to taste

 

Instructions:

In a small bowl combine onion, lime juice and low sodium salt.

In a medium bowl, combine avocados, pumpkin, and cilantro. Toss with lime juice and onions and serve immediately.
